PIZZA, SALAD, SANDWICH, SUSHI?

Deerhurst’s Maple eatery dishes full plate of updated favourites in a fresh Muskoka setting.


Low key gathering place showcases local must-trys ranging from Wabora Asian specialties to Kawartha Dairy ice cream.


HUNTSVILLE, ON, June 2009 – You know the debate. He wants a burger, you were thinking seafood, one kid is begging for pizza and the family vegetarian is already shrugging her shoulders.

In North Muskoka, deciding where to go for an easy dinner out, an impromptu business or post-golf lunch, even a game time get-together, just got easier with the opening of Deerhurst Resort’s Maple restaurant and patio.

The streamlined 94-seat eatery and 110-seat patio occupies the resort’s former pub space on the lower floor of the Pavilion next to the Deerhurst Lakeside Pro Shop.

“It’s still casual favourites dining, but with lots of modern tastes,” says Dean MacNeil, Deerhurst’s director of food & beverage. “We focused on must-have dishes from around the globe – including great flatbreads and pasta, sandwiches, bar snacks and really interesting salads – and then how to accent them using top Ontario and homegrown Muskoka ingredients.

So Maple’s something for everyone, but not overwhelming, menus mix in items like Windmill Bakery focaccia, Milford Bay smoked trout, Bala cranberries and ciabatta from Toronto’s renowned Ace Bakery, as well as two rather unexpected hits.

Deerhurst is the only hotel in Huntsville to serve California rolls, gyoza and spring rolls from top-rated Bracebridge Asian fusion restaurant Wabora. The popular specialties are prepared fresh daily and delivered to Deerhurst.

Maple’s dessert menu also features that world-famous American export Cheesecake Factory™ cheesecake in a generous “for two” portion – with a Deerhurst maple syrup drizzle, of course.

"Our goal with Maple is a real neighbourhood restaurant and meeting place. Even if you aren’t a local we want you to feel like one when you’re here,” explains Deerhurst Executive Chef Rory Golden. “These days, people want more relaxed dining, but with excellent quality and international flavours. Maple is an every day place, but each dish is still carefully prepared and a little bit special.”


The space also got an upgrade, painted in earth tones with lots of exposed wood grain from floors to furniture, and a stonework fireplace feature that, come winter, is sure to become a snowmobilers’ gathering spot.

“It’s very simple, but warm,” says MacNeil.

Entree prices at Maple range from $10 to $23 and a kids' menu is available for those under 12. The eatery and bar are currently open from 11 a.m. to 11 p.m. seven days a week. "So far we've gotten a great reception from everyone, including lots of repeat guests," Golden confirms. “People are excited to have something really comfortable with so many choices, whether they are from somewhere else or right here in our own backyard"


Why it's essential
This spot really fits for either a working lunch or a casual evening date, a couple of courses or a quick sandwich. Reason enough to come here are the stone-fired flatbread style pizzas and calzones. Premium ingredients plus vegetarian and gluten-free options put these above standard pies. Plus the location is easy to get to, just off Highway 60 with plenty of parking and drive-up snowmobile access.


Why it's good
Maple’s eclectic menu is reminiscent of those family restaurants from 30 or more years ago. They do everything from an authentic shrimp po’ boy to Italian pastas, prime steaks and St. Louis style ribs.


Back story
The restaurant’s name was inspired by the groves of trees that cluster Deerhurst’s 780-acre property, changing with the seasons, as well as the resort’s annual, on-site maple syrup harvest. Around a half-dozen dishes are infused with this liquid gold including salad dressing, seared salmon, chocolate-dipped cookies and a frozen maple soufflé.


Surroundings
Now a single-level space, the redone room now boasts an ample bar that seats about 12 comfortably as well as a requisite but unobtrusive large screen TV. Sharp black & white artwork mixes historic Deerhurst images with shots of sap buckets and sugaring off. Service staff are not the youth you find in most moderate restaurants, but more experienced people who have done this for a while. Ask them for informed suggestions about the food and drink.


Essential orders
Maple’s California crunch salad with dried fruit, sunflower seeds and a refreshing raspberry vinaigrette; the juicy firecracker burger with jalapeno spiked mayo served on chipotle flatbread; Wabora’s top-notch California roll packed with crabmeat, English cucumber and creamy avocado; a dinner portion of braised beef short ribs; and the handmade ice cream sandwich stacked between two fudgy brownies.
